TBH I only recently got my new switch along with a copy of scarlet and a copy of violet and I am playing through Scarlet first and I have sailed through with a Sylveon for example I defeated Klawf, Bombirdier, Giacomo and Brassius with my Sylveon(who is female and why I sailed through those fights easily as she has cute charm) and is named Mirror B (she was a pokemon home gift pokemon but any wild caught female eevee into sylveon is good) and I didn't even need to switch and the only moves I had on her were quick attack, charm, covet and disarming voice. I honestly don't know why people were saying that the bombirdier fight was hard as I didn't use potions on my sylveon or switch her out during the 2nd fase (maybe because arven was useful for me with oly using a smackdown after I took bombirdier low) in short Sylveon is the Best.
